What I Ate In A Day No.2: Crumpets, Stir Fry & Fajitas

It is that time again, sharing with you what I ate in a day. This series is beginning to become a fond favourite of mine! I am loving being able to share with you how easy it is to eat a cruelty-free diet and how accessible veganism can be.

Breakfast

As much as I love porridge, switching up my morning routine from time to time is wonderful. This morning I had delicious giant crumpets with Pure Dairy Free spread and Marmite. It truly is a love it or hate it spread but you can force yourself to like the B12 laden delight and reap all of those benefits!

Mid-Morning Snack

The Cocoa Coconut Nakd Bar tastes just like a Bounty! Healthy, moorish and delicious, this is a great mid-morning pick me up whilst blogging. Twinned with a coffee or cuppa tea, I’m a happy bunny.

Lunch

The best way to use up leftover greens and tofu is in a stir fry. This is such a simple dish of tofu cooked in soy sauce, ginger, chilli and garlic with sesame seeds and kale. Thrown on top of a bed of nutty soba noodles it’s a perfect lunch!

Dinner

For a bit of a mid-week treat, we tried Linda Mcartney’s pulled ‘chicken’. The texture is incredibly similar to that of shredded chicken pieces which initially was quite bizarre! I am not the biggest advocate of fake meat, especially those that taste extremely authentic. However, after adding fajita spices from the fajita kit, the ‘chicken’ pieces looked appetising and tasted great twinned with salsa. We topped ours with sautéed peppers and spring onions, Violife cheese and lettuce!
