So, you may be wondering, what do vegans eat on a day to day basis?
Is it really just lettuce leaves and rabbit food?
Well friends, I’m here to start my new series of ‘What I Ate In A Day’ to show you that there is rarely a lettuce leaf in sight! This little series is inspired by the lovely Jen over at Win Friends With Salad, go check her out!
This Sunday we treated ourselves to a long lie in, fresh coffee and Just Roll Cinnamon Swirls. Yes, these delicious creations are accidentally vegan and taste incredible. What’s more, there is minimal preparation needed; cut them into slices, pop then in the oven and voila! They fill the house with the smell of a bakery and are a fantastic weekend treat.
After breakfast we jumped in the car and headed to the Essex coast. I couldn’t believe how much I had been craving fresh sea air. Living in a city and working in London definitely has it’s cons as it seems my lungs were craving unpolluted O2. We dipped our toes in the water, collected shells and sea glass and played with the cutest of dogs!
You cannot be Vegan and not love avocados right? Smashed avo on toast is the one. For lunch I topped mine with sundried tomatoes, rock salt and chilli garlic flakes. I sat munching this delicious dish whilst catching up on weekly Youtube videos.
Sundays are not the same without a roast. As the temperature is dropping and winter is around the corner, we couldn’t resist cooking up some roasties and an abundance of veg. Linda Mcartney’s Rosemary and Red Onion Sausages are the best accompaniment for a roast. We paired ours with Sainsbury’s Garlic Herb stuffing, leafy green broccoli, roasted veg and crispy sweet potatoes.
That evening we curled up on the sofa with the duvet, caught up on our favourite TV shows and I planned for the week ahead.
