This strawberry and walnut salad embodies Spring in one dish. Using fresh British strawberries, organic raw walnuts and wholegrain quinoa you cannot resist this dish for a wholesome lunch. I topped mine with a balsamic and olive oil drizzle to enhance the flavours. Read on to find out how to make this wonderful salad.

1/2 cup of quinoa
a handful of strawberries
a handful of baby spinach
a palmful of walnuts
Balsamic Olive Oil Dressing
3/4 cup extra-virgin olive oil
1/4 cup balsamic vinegar
a pinch of salt
Begin by adding the dried quinoa to a saucepan with a sprinkle of herbs du province, a cap full of apple cider vinegar and cover with boiling water.
Set to simmer for 10-15 minutes until the quinoa doubles in size. Rinse and drain and set aside.
Chop up the strawberries, baby spinach and crush the walnuts then placing into a bowl.
Mix in the quinoa, season with salt and pepper and drizzle with the balsamic dressing if you wish.
Extra topping ideas
Add chia seeds and avocado cubes for a fatty punch
Top with toasted pumpkin and sunflower seeds for a nutty boost
