Overnight Raw Chia Pudding

This overnight raw chia pudding is incredibly easy and nutritious. Packed full of essential vitamins such as Omega-3, fibre, magnesium and calcium, this little seed is definitely an ancient super food. With minimal ingredients and little to no prep time needed, there are no excuses when it comes to creating this as a dessert or for breakfast.

Serves 1


3 tbsp chia seeds

3 tbsp water

3 tbsp dairy free milk

maple syrup


With the ingredient measurements being rather precise, you really do not have to be. I stick to the rule of 1/3 for each key ingredient, to create the perfect balance. If the mixture is too wet you can add more chia later on, if it is too thick then add more milk or water. I added a drizzle of maple syrup to add sweetness and cinnamon for warmth. Once you have thoroughly mixed the chia into the liquid, leave to set in a covered bowl overnight.

You can top this pudding with anything you like. Why not try fresh banana, blueberries and raspberries. Or adding raw nuts, cacao nibs and goji berries.

You could try these alternatives too:

Cacao Heaven Chia Pudding

Add 1/2 a tsp of cacao powder to the mix and top with cacao nibs.

Very Berry Chia Pudding

Create a fruit coulis from blueberries and raspberries by blending the fresh fruit and adding a dash of maple syrup and chia seeds to bind it together. Add to the chia mix and leave to set overnight.

    Is it really odd that I love the way chia seeds look? I think they just make everything look so pretty and extra tasty!
